Baked apples are a healthy and easy dessert all year round – you don’t have to keep them just for the depths of winter. Use an apple that has a bit of a tang to contrast with the nutty filling.

Ingredients
7 apples
Filling:
1/2 cup seedless raisins
1 cup walnut pieces
1/2 cup walnut pieces, ground
1/2 lemon, zest and juice
60g butter, softened
1/4 cup brown sugar
1 tsp ground cinnamon
2 tsp grated ginger
Pinch of sea salt, optional
7 cinnamon quills, optional
Method
Serve with custard or your favourite vanilla ice cream.
